Soy Glazed Chicken with Cous Cous

Ingredients: The ingredient amounts are for four portions.
- Chicken Breast 4 (125g or 4.4oz per breast)
- Cous Cous 160g or 5.6oz, dry
- Corn Flour 30g or 1oz
- Oyster Sauce 2 tbsp
- Spring Onion 1
- Sesame Seeds 1 tsp
- Black Pepper ½ tsp
- Salt pinch
- Soy Sauce 2.5 tbsp
- Garlic 4 cloves
- Honey 3 tsp
- Olive Oil 1 tbsp
Instructions:
Combine the soy sauce, oyster sauce, honey, and minced garlic in a bowl. Set
aside.
Season the chicken breasts on both sides with salt and black pepper. Lightly coat
both sides in cornstarch, shaking off any excess.
Place a non-stick pan over medium-high heat and add the oil. Once hot, cook the
chicken for 4 to 5 minutes per side until golden and crisp. Remove from the pan
and set aside.
Reduce the heat slightly. Pour the glaze mixture into the pan and simmer for 30 to
40 seconds until it starts to thicken.
Add the cous cous to a heatproof bowl. Pour over 240ml boiling water, cover, and
leave for 5 minutes. Fluff with a fork. Return the chicken to the pan. Coat each
piece in the glaze and cook for 1 minute per side over high heat until caramelised
and glossy.
Plate the cous cous, top with the glazed chicken, and finish with sesame seeds and
sliced spring onion.
