Smoky Citrus Chicken Salad

Ingredients: (Makes 2)
- Chicken Breast 4 (125g or 4.4oz per breast)
- Marinade :1 tbsp olive oil, 2 tbsp soy sauce, 2 tbsp honey, Zest and juice of 1 lemon, 1.5tsp smoked paprika, 1 tsp cumin, 1 tsp dried oregano, ½ tsp salt, ½ tsp black pepper
- Lettuce 250g or 8.8oz
- Red Cabbage 200g or 7oz
- Red Pepper 2, large
- Clementine 2
- Carrot 2, medium
- Pumpkin Seeds 2 tbsp
- Dressing : Juice of 3 oranges, 2 tbsp olive oil, 2 tbsp apple cider vinegar, 1 tbsp Dijon mustard, 2 tsp honey, pinch of salt and black pepper
Instructions:
In a mixing bowl or zip-top bag, combine 1 tbsp olive oil, 2 tbsp soy sauce, 2 tbsp
honey, the zest and juice of 1 lemon, 1½ tsp smoked paprika, 1 tsp ground cumin, 1
tsp dried oregano, ½ tsp salt, and ½ tsp black pepper. Add 500g chicken breast
and coat thoroughly. Cover and marinate for at least 15 minutes, or refrigerate
overnight for a richer flavour.
Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for
about 6–8 minutes per side (depending on thickness) until cooked through and
nicely charred. Rest for 5 minutes, then slice.
In a large bowl, combine romaine lettuce, shredded red cabbage, grated carrots,
sliced red pepper, pomegranate seeds, and clementine segments. Sprinkle
pumpkin seeds over the top.
In a small jar or bowl, whisk together the orange juice, olive oil, apple cider vinegar,
Dijon mustard, honey, salt, and pepper until well emulsified.
Toss the salad with the dressing just before serving. Top with sliced chicken and an
extra sprinkle of seeds or pomegranate for garnish
