SINGAPORE NOODLES
Ingredients:
- 125g low-calorie, Slendier noodles, well rinsed
- 150g prawns
- 1 teaspoon extra virgin olive oil (7g)
- 1 garlic clove grated
- ½ teaspoon of ginger grated
- 50g carrot peeled and sliced thinly
- 50g red capsicum sliced thinly
- 50g cabbage sliced thinly
- 20g spring onions sliced thinly
- 1 tablespoon soy sauce
- 1 tablespoon tomato sauce
- 1 teaspoon curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions:
- Prepare Slendier noodles as per instructions on the pack
- Add oil to the pan add garlic and ginger, cook until the aroma releases.
- Add prawns and cook for 2-3 minutes or until cooked.
- Add carrot, cabbage, and red capsicum and cook until tender.
- Add curry powder, turmeric, tomato sauce and soy sauce.
- Toss the noodles and coat with sauce.
- Garnish and serve with spring onions.
