SCRAMBLED EGG AND FETA HASH
Ingredients:
- 1 teaspoon extra virgin olive oil (7g)
- 90g cherry tomatoes, halved
- 50g onions, chopped
- 60g feta cheese, cut into small cubes
- 3 whole eggs and 120g egg white
- 3g snipped chives
- 5g olives
- 110g spinach
- Salt and pepper to taste
Instructions:
- Heat the oil in a non-stick pan on a low-medium heat. Add the tomatoes and onions, and julienned spinach and cook gently for 3-4 minutes until softened.
- Add the feta and cook for 1 min to warm through, then pour in the eggs and chives. Season with pepper and keep stirring to scramble the eggs.
- Season with salt and pepper and garnish with olives.
