SCRAMBLED EGG AND FETA HASH

 

Ingredients:

  • 1 teaspoon extra virgin olive oil (7g)
  • 90g cherry tomatoes, halved
  • 50g onions, chopped
  • 60g feta cheese, cut into small cubes
  • 3 whole eggs and 120g egg white
  • 3g snipped chives
  • 5g olives
  • 110g spinach
  • Salt and pepper to taste

Instructions:

  1. Heat the oil in a non-stick pan on a low-medium heat. Add the tomatoes and onions, and julienned spinach and cook gently for 3-4 minutes until softened.
  2. Add the feta and cook for 1 min to warm through, then pour in the eggs and chives. Season with pepper and keep stirring to scramble the eggs. 
  3. Season with salt and pepper and garnish with olives.
