SCRAMBLED CURRY EGG WHITES

 

Ingredients:

  • 250g egg white
  • 1 teaspoon butter (7g)
  • 1 tablespoon almond milk
  • 50g bell pepper, thinly sliced
  • 50g cherry tomatoes
  • 150g spinach 
  • 1 teaspoon curry powder
  • Salt to taste

Instructions:

  1. Lightly grease a nonstick pan with butter over medium-low heat.
  2. Sauté bell pepper until slightly tender. Remove from pan.
  3. Mix egg whites with milk. Pour in to skillet and scramble.
  4. Add Bell pepper, tomatoes, spinach and season with curry powder and salt.
  5.  Scramble well and serve. Enjoy!
