  • 50g halved grape tomatoes, quartered
  • 20g scallion greens, divided
  • 20g roasted deshelled pistachios, crushed

Instructions:

  1. In a small bowl, combine cottage cheese with crushed pistachios, salt, and pepper, to taste.
  2. Layer cucumbers, peppers, scallions, and tomatoes on top.
  3. Sprinkle with a pinch of salt and pepper, to taste.
