SATAY BEEF WITH PUMPKIN AND LIME LEAF

 

Ingredients:

  • 1 teaspoon extra virgin olive oil (7g)
  • 150g lean beef 
  • 1 tablespoon red curry paste
  • 60ml canned coconut cream
  • 1 teaspoon fish sauce
  • 250g pumpkin (raw), cut into cubes lightly steamed
  • 100g green peas

Method:

  1. Heat oil in a wok over high heat. When smoking, stir-fry beef, in batches, for 30-60 seconds or until just browned. Set aside.
  2. Add the curry paste and stir-fry for a few minutes until fragrant. Add coconut cream, fish sauce, pumpkin and green pea, and stir-fry for 4-6 minutes or until heated through. Return the beef to the wok and stir-fry until warmed through.
