ROCKET PRAWN NOODLES

 

Ingredients:

  • 250g low calorie Slendier noodles (Well Rinsed)
  • 2 Garlic cloves Crushed
  • 1/2 teaspoon Minced Chilli
  • 60g Tomatoes
  • 40g Asparagus Cut in 3cm Lengths
  • 250ml Water
  • 150 g Prawns
  • 50 g Rocket
  • Half a Lemon Zest
  • 20g Parsley, Fresh
  • ½ teaspoon Black Pepper

Method:

  • Place noodles in a bowl and cover with boiling water, set aside.
  • Heat an oil-sprayed non-stick fry pan over moderate heat, add garlic, chilli and tomatoes and cook for a few minutes until tomatoes begin to soften. Add asparagus a splash of, stock or water, cover and bring to boil. Add prawns, cover again, and bring to the boil and cook for 5 minutes.
  • Stir through drained noodles and rocket. Sprinkle with lemon zest, parsley and a squeeze of lemon and cracked black pepper to serve.
