ROASTED BBQ CHICKEN DRUMSTICKS

Ingredients:
- 200g chicken drumsticks
- 1 teaspoon extra-virgin olive oil (7g), divided
- 250g carrot, cut diagonally
- 50g onion, rough chopped
- 3 cloves of garlic
- 1/4 teaspoon smoked paprika
- 2 tablespoon BBQ sauce
- Salt and pepper to taste
Instructions:
- Heat oven to 450 degrees F (230 degrees C).
- Place the cut carrots, onions, and garlic in a small baking dish. Add half of the olive oil, salt, pepper, and smoked paprika and toss to coat. Set aside.
- In a small bowl, whisk together the BBQ Sauce, remaining olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
- Place the chicken drumsticks in a small bowl and pour the BBQ sauce mixture over the chicken. Using your fingers, make sure the sauce mixture coats each chicken drumstick.
- Lay the chicken on top of the vegetables in the baking dish.
- Bake for 30 minutes.
- Remove from the oven and cover the baking dish with foil. Let chicken rest for 10 minutes and enjoy.
