RICE WITH TUNA CURRY AND BEANS

 

Ingredients:

  • 65g basmati rice(raw)
  • 150g Tuna
  • 1 teaspoon extra virgin olive oil (7g), divided
  • 250g green beans
  • 50g onion, divided
  • 1 teaspoon lime juice
  • 3 green chillies
  • 70g tomatoes
  • 1 teaspoon cumin powder
  • 1 sprig curry leaf
  • 1 tablespoon curry powder
  • 1 teaspoon chilli powder
  • 3 cloves garlic, divided
  • 50ml canned coconut milk
  • 1 teaspoon turmeric powder, divided
  • Salt and pepper to taste

Instructions:

  1. First rinse the rice well under running water and cook the rice with 130ml of water, pinch of salt and in medium low heat for approximately 15minutes. Once done keep and set aside.
  2. Heat and spray oil in a frying pan. Add the Tuna carefully without getting it spattered. Add the chili powder, salt and mix well. Stir the tuna regularly until well fried (approx. 5 min.)
  3. Add the tomato, green chili, onion and lemon juice. Keep stirring the mix until the onions soften and the mix is well cooked finally add the 100ml water and let simmer once simmering let the gravy thicken.
  4. To make the Beans Add chopped garlic, curry leaves and allow it to sizzle. Add sliced onions and sauté till they turn translucent. Once done add in chopped string beans. Sprinkle with salt, turmeric powder and sauté for 2 minutes.
  5. Add coconut milk, cover it with the lid and allow it to steam cook for at least 10 minutes.
  6. Serve rice with Tuna Curry and stir-fried beans.
