PUMPKIN PROTEIN MUFFINS
Ingredients:
- 40g Oats Flour
- 1 teaspoon virgin coconut oil (7g)
- 1 Scoop Vanilla Protein Powder (35g)
- ½ teaspoon Pumpkin Pie Spice
- ½ teaspoon Baking Powder
- 2 large whole Eggs
- 150g Canned Pumpkin
- 2 tablespoon almond milk
- 1 teaspoon Vanilla Extract
Instructions:
- Preheat an oven to 350F and spray a muffin tin with non-stick cooking spray or place silicone muffin moulds on a baking sheet.
- Mix the dry ingredients together in a large bowl.
- Gradually stir in the eggs, canned pumpkin, and vanilla extract. Stir until you have an evenly mixed batter. If the batter is too thick add milk gradually to make the batter smooth.
- Spoon the batter into the muffin tin or moulds, filling each mould about 3/4 full.
- Bake for 23-26 minutes or until the muffins are cooked through and the tops are golden brown.
- Transfer the muffins to a wire rack to cool and enjoy!
