PUMPKIN PIE SMOOTHIE BOWL

 

Ingredients:

  • 200g pumpkin purée
  • 100g frozen cauliflower, steam and freeze for best flavour
  • 20g pitted dates, to taste
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  •  ¼ teaspoon nutmeg
  •  ¼ teaspoon cloves
  •  ¼ teaspoon allspice
  • ½ teaspoon coffee powder
  • 300ml Unsweetened almond milk
  • 1 scoop whey protein powder (35g) vanilla flavour

Toppings:

  • 30g rolled oats, toasted
  • 20g shredded coconut
  • 1 tablespoon Chia seeds
  • 1 tablespoon sugar free syrup

Instructions:

  1. Combine pumpkin puree, frozen cauliflower, date, spices, coffee powder. Puree until completely smooth – the mixture should be thick. Add a touch more liquid if necessary to get it to blend completely smooth.
  1. Transfer to a bowl and add toppings as desired. Enjoy!
