PUMPKIN PIE SMOOTHIE BOWL
Ingredients:
- 200g pumpkin purée
- 100g frozen cauliflower, steam and freeze for best flavour
- 20g pitted dates, to taste
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon cloves
- ¼ teaspoon allspice
- ½ teaspoon coffee powder
- 300ml Unsweetened almond milk
- 1 scoop whey protein powder (35g) vanilla flavour
Toppings:
- 30g rolled oats, toasted
- 20g shredded coconut
- 1 tablespoon Chia seeds
- 1 tablespoon sugar free syrup
Instructions:
- Combine pumpkin puree, frozen cauliflower, date, spices, coffee powder. Puree until completely smooth – the mixture should be thick. Add a touch more liquid if necessary to get it to blend completely smooth.
- Transfer to a bowl and add toppings as desired. Enjoy!
