PUMPKIN AND CHICKEN FRIES

 

Ingredients:

  • 250g pumpkin
  • 150g boneless chicken breast
  • 1 teaspoon olive oil (7g)
  • 1/4 teaspoon paprika powder
  • 1/4 teaspoon chilli flakes
  • 1/2 dashes cinnamon
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon basil
  • 1/4 teaspoon thyme
  • 5g parsley
  • 10g mint leaves
  • Salt to taste

Method:

Step 1

Start by pre-heating the oven to a temperature of 200 degree Celsius. Meanwhile, line a baking tray with aluminium foil and set aside.

Step 2

Now, peel the skin of the pumpkin and chop them into slices of the size of fries and also cut the chicken in to battons. Now, in a medium-sized bowl, pour some olive oil and toss all the pumpkin and chicken slices in it.

Step 3  

Sprinkle chopped thyme, garlic, basil, and parsley leaves over it along with the spices like paprika and chilli flakes. Toss them well so that they have an even coating of the spices and herbs.

Step 4

Now, place these fries on the baking tray in a single layer and slide this tray in the preheated oven. Bake until the fries turn golden brown in colour for about 20-25 minutes and crisp from all the sides. Take these out from the oven and serve hot in a serving bowl.
