Protein Custard Toasts

 

Ingredients: The ingredient amounts are for two.

  • Greek Yoghurt 150g or 5.2oz
  • White Bread 4 sliced, medium thickness
  • Eggs 2
  • Blueberries 125g or 4.4oz
  • Whey Protein 1 scoop, Vanilla
  • Honey 2 tsp
  • Cinnamon ½ tsp
  • Nutmeg ¼ tsp

Instructions:

Preheat the oven to 200 °C / 390 °F and line a baking tray with parchment paper.
In a bowl, whisk together the eggs, Greek yogurt, protein powder (if using), honey,
cinnamon, and nutmeg until smooth and creamy.


Lay the slices on the baking tray. Using the back of a spoon or the bottom of a
glass, press down gently in the centre of each slice to form a shallow well — be
careful not to tear through the bread.


Spoon the custard mixture into each well and scatter the blueberries over the top.
Bake for 10–15 minutes until the custard is set and the edges of the bread are crisp
and golden.


Drizzle with a little extra honey, sprinkle more cinnamon if you fancy, and enjoy
warm.
