POTATOES WITH GREEN SAUCE
Ingredients:
- 250g Carisma Potatoes
- 100g mix salad leaves
- 20g coriander
- 10g chives
- 10g Parsley
- 1 teaspoon mustard
- 10g olives
- 1 teaspoon extra virgin olive Oil (7g)
- 2 tablespoon sour cream
- 75g Greek yoghurt
- 2 eggs
- Salt and pepper to taste
Instructions:
- Boil the Potatoes till soft.
- Hard boil the eggs as well.
- Mix the oil, mustard and yoghurt until you get a creamy paste.
- Then, add the sour cream and flavour with salt and pepper.
- Finely chop the herbs and add to the sauce and mix it well or blend it till smooth. If the consistency is too firm, add more sour cream for yoghurt. Season with salt and pepper.
- Arrange all the ingredients in a plate, arrange the olives on the salad and serve.
