Pepper Egg Boats

Ingredients: (Makes 1)
- Red Pepper 1, large
- Eggs 2
- Cherry Tomato 2, single
- Green Olives 2
- Mini Mozzarella Balls 2
- Chives 1 tsp, chopped
Instructions:
Preheat your oven to 180°C (356°F). Slice the bell pepper in half lengthwise and
remove the seeds. Crack one egg into each pepper half. Evenly distribute the
cherry tomatoes, olives, and mini mozzarella into the peppers. Season with salt
and black pepper.
Place the stuffed peppers on a lined baking tray. Bake for 35 minutes, or until the
egg whites are set and the yolks are slightly runny. Sprinkle with chopped chives
before serving. Enjoy warm, straight from the oven!
