PAN FRIED WHITE FISH WITH VEGETABLES
Ingredients:
(makes 01 serving)
- 150g white fish fillet
- 1 teaspoons olive oil
- 30g asparagus tips,
- 50g halved cherry tomatoes
- 50g julienned zucchini
- 50g julienned carrot
- 20gJulienned bell peppers
- 20g green pea
- 10g coriander leaves
- Salt and pepper
Method:
- Add the olive oil to the pan.
- Sauté the fillet on both sides over medium heat for about two minutes or until the fish is opaque and a knife will slide into the fish without resistance.
- After adding salt and pepper, top the cooked fish with mixed vegetables with a little oil and vinegar and cook till the vegetables are cooked and crunchy.
- Add Fresh herbs, a pinch of your favourite spice, or just a squeeze of lemon or lime.
