PAN FRIED WHITE FISH WITH VEGETABLES

 

Ingredients: 

(makes 01 serving)

  • 150g white fish fillet
  • 1 teaspoons olive oil
  • 30g asparagus tips,
  • 50g halved cherry tomatoes
  • 50g julienned zucchini
  • 50g julienned carrot
  • 20gJulienned bell peppers
  •  20g green pea
  • 10g coriander leaves
  • Salt and pepper

Method:

  • Add the olive oil to the pan.
  • Sauté the fillet on both sides over medium heat for about two minutes or until the fish is opaque and a knife will slide into the fish without resistance.
  • After adding salt and pepper, top the cooked fish with mixed vegetables with a little oil and vinegar and cook till the vegetables are cooked and crunchy.
  • Add Fresh herbs, a pinch of your favourite spice, or just a squeeze of lemon or lime.
