OATMEAL BRULEE

 

Ingredients:

(makes 04 serving)

  • 150ml almond milk/oat milk
  • 1/4 teaspoon kosher salt
  • 65g quick cooking oats
  • 1 vanilla pod
  • 1 tsp brown sugar
  • 1-pint fresh raspberries

Method:

  • In a small saucepan bring milk and salt to a boil. Split vanilla bean and scrape the seeds into the water with the oats. Add the whole pod for more flavour (optional).
  • Add the oats, reduce heat, and cook for 3-5 minutes.
  • Cover and remove from heat and let sit until it reaches the consistency you prefer. Remove vanilla pod.
  • Divide the oatmeal among four broiler-proof bowls. Top with 3-4 raspberries, sprinkle 1 tablespoon of sugar over each, and place under broiler. Broil until sugar caramelizes and forms a crust, about 3 to 4 minutes. Watch carefully so sugar does not burn.
  • Serve immediately.
