OATMEAL AND MUSHROOM STIR FRY

 

Instructions: 

  • 150g white meat boneless (Chicken breast/ Turkey breast/ Lean Pork)
  • 30g rolled oats
  • 75g button mushroom, sliced
  • 75g oyster mushroom, sliced
  • 1 teaspoon extra virgin olive oil (7g)
  • 2 cloves garlic, chopped
  • 30g onion, sliced
  • 1 sprigs thyme
  • 100g spinach
  • 100ml water
  • Salt and black pepper to taste

Instructions:

  1. Heat oil in a non-stick pan on medium flame. When the oil is hot enough, add the chopped garlic in it and sauté till golden in colour. Then, add the onion in the pan and sauté till translucent and golden.
  2. Then, add the sliced chicken and cook for 5 minutes. Next add button and oyster mushrooms in the pan along with salt, crushed pepper, and torn thyme sprigs. Mix well and turn the flame to high, stir fry the mushrooms for two to three minutes.
  3. Add water in the pan, mix well with the mushrooms and bring it to a boil. Turn the flame to medium and add the oats in it. Stir continuously till the oats and mushroom are cooked. Afterwards, add the chopped spinach and mix once again. Cook for about 5 minutes and remove the pan from burner.
  4. Finally, for serving the dish, put some oats and mushroom chicken mixture on platters and serve hot.
