Nutty Honey Granola
Ingredients: (Makes 10 large portions)
- Porridge Oats 250g or 8.8oz
- Mixed Nuts 100g or 3.5oz
- Dried Mixed Fruit 50g or 1.70oz
- Honey 2 tbsp
- Peanut Oil 2 tbsp
- Pumpkin Seeds 20g 0.7oz
- Salt pinch
- Chia Seeds 1 tbsp
Instructions:
Preheat your oven to 180°C (350°F).
In a large mixing bowl, combine the oats, chopped mixed nuts, mixed seeds,
peanut oil, honey, and a pinch of salt. Stir until all the dry ingredients are well
coated with the honey and oil.
Spread the oat mixture evenly onto a lined baking tray. Bake for 10 minutes, stirring
halfway through to ensure even toasting.
Remove the granola from the oven and sprinkle the dried fruit over the top. Stir to
mix the fruit in evenly.
Return the tray to the oven and bake for an additional 8 minutes, or until the
granola is golden brown and fragrant.
Allow the granola to cool completely on the baking tray. It will crisp up as it cools.
Once fully cooled, store in an airtight container for up to 2 weeks.
