MUSHROOM RIS-OAT-TO

Ingredients:
- 45g Oats
- 1 teaspoon extra virgin olive oil (7g)
- 150g mushrooms
- 50g baby Spinach
- 45g Parmesan cheese, grated
- 50g shallot, chopped
- 1 sprig of thyme
- 150ml Water
- Salt and pepper to taste
Instructions:
- Cook sliced mixed mushrooms in olive oil in a large nonstick skillet over medium-high heat until browned. Keep aside.
- Then add oats, minced shallot, and chopped thyme to the skillet; cook, tossing, until lightly toasted, 1 minute.
- Next, add water and bring to boil.
- Season with salt and a pinch of pepper.
- Simmer, stirring often, until tender and saucy, for 10 minutes. Stir in the mushrooms, baby spinach, and grated parmesan.
