MOROCCAN CHICKEN WITH SWEET POTATO MASH

 

Ingredients:

  • 250g sweet potatoes, cubed
  • 300ml water
  • 2 teaspoon cumin
  • 150g boneless chicken breasts 
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 onion, thinly sliced
  • 1 garlic clove, crushed
  • 100ml chicken stock
  • 1 teaspoon cornstarch
  •  ½ lemon juice
  • 20g pack coriander, leaves chopped
  • Salt and pepper to taste

Method:

  1. Boil the potatoes in 300ml salted water for 15 minutes or until tender. Sprinkle cumin all over the chicken. Spray oil in large frying pan, and then brown the chicken for 3 minutes on each side until golden.
  2. Lift the chicken out of the pan. Add the onion and garlic and cook for 5 minutes until softened. Add 100ml stock, lemon juice, corn starch and return the chicken to the pan, then simmer for 10 minutes until the sauce is syrupy and the chicken cooked.
  3. Mash the potatoes with 1 teaspoon oil and season. Thickly slice the chicken breast and stir the coriander through the sauce. Serve the chicken and sauce over mash.
