MIXED VEGETABLE SKEWERS

 

NOTE: (any sort of vegetables can be used of choice)

Ingredients:

  • 50g cherry tomatoes
  • 50g red bell pepper
  • 50g small mushroom
  • 75g carrot
  • 50g onion
  • 1 teaspoon cocoa powder
  • 50g yellow bell pepper
  • 10g low fat yoghurt
  • 1/3 teaspoon oregano
  • 3 cloves garlic
  • salt as required
  • 1 teaspoon olive oil (7g)
  • 1/3 tablespoon chilli powder
  • 1/3 tablespoon black pepper
  • 100g baby eggplant

Method:

Step 1

To make this recipe, wash the vegetables in running water and slice the bell peppers, mushrooms, carrot, baby eggplant on a chopping board. Add hot water in a bowl and put the mushrooms and soak for 5 minutes, then drain the water.

Step 2

For the preparation of marinate mixture, take cocoa powder, chili powder, and fresh curd. Mix them well and then add dried oregano, oil, and crushed garlic cloves. Add salt and black pepper as per your taste.

Step 3

When the mixture is ready, add bell peppers, carrot, onion, cherry tomatoes, baby eggplant in it and marinate for about 5 to 6 hours. Meanwhile, take a chopping board and chop spring onions evenly.

Step 4

Once the vegetables are marinated properly, add them alternatively on skewers. Place the skewers on hot charcoal grill for 10 minutes. Your Mexican kebabs are ready to be served. Serve hot with any dip and spring onions.
