MEXICAN CURRIED EGG & BURRITO WRAP

 

Ingredients:

(makes 01 serving)

  • 175 ml Eggs Whites (5 eggs) 
  • 1 Low Carb Wrap /roti /tortillas (42g)
  • 20g Baby Spinach and 1tsp curry powder
  • 20g Spring Onion 
  • 25 ml 99% Fat Free Mayonnaise 
  • 3g Curry Powder
  • 1 Avocado (135g) 
  • 2 pinches Iodized Salt 

Method:

  • Fill a small saucepan with 500 ml of water and bring it to a boil over medium heat. 
  • Once the water is boiled, add the eggs and boil for 4 minutes. 
  • Remove pan from stove and empty out the water, then pour cold water over eggs to cool it down.
  • Peel the eggshells, discard the egg yolk and slice the egg. 
  • Mix the mayonnaise and curry powder in a bowl until well combined. Then add the pepper. Mix in the eggs and place in the refrigerator to cool.
  • Place wrap on a serving plate, layer with greens/ salads then add in the egg mixture.  Season with salt and pepper and serve.
