MEDITERRANEAN TURKEY SANDWICH

 

Ingredients:

  • 150g White meat boneless (Chicken breast, Turkey breast, Lean pork)
  • 1 teaspoon extra virgin olive oil (7g) 
  • 1 slice whole meal bread
  • 30g black olives, chopped
  • 50g spinach leaves, shredded
  • 50g cucumbers sliced
  • 30g tomatoes sliced
  • 30g onion red onions, sliced
  • 50g avocados pitted and sliced
  • 45g feta cheese crumbled
  • 5g green chillies sliced
  • salt and pepper to taste

Instructions:

  1. To make your turkey sandwiches, slice the turkey breast in to thin slices. Then rub salt and pepper on the slices and cook them on a non-stick pan over medium low heat for approximately 7-8 minutes. Don’t overcook or the meat will lose its moisture.
  2. Start piling up your toppings and season the sandwich with salt and pepper.
  3. Serve or keep in the fridge for the next day!
