Levant Egg Flatbread

 

Ingredients: (Makes 1)

  • Eggs 2
  • Flatbread 1, 80g or 2.8oz pieces
  • Greek Yoghurt 2 tbsp, 0% fat
  • Red Onion 1/2 small
  • Garlic 1 clove
  • Parsley 2 tbsp, chopped
  • Black Pepper 1 twist
  • Spring Onion 1

Instructions:

Place eggs in a saucepan with cold water. Bring to a boil, then simmer for 7
minutes for soft-boiled or 9 minutes for firmer yolks. Transfer to cold water, peel,
and slice.


In a small bowl, mix Greek yogurt with minced garlic and a pinch of black pepper.
Lightly toast or heat the flatbread in a dry pan for 1-2 minutes on each side until
warm and pliable.


Spread the garlic yogurt evenly over the flatbread. Top with sliced boiled eggs.
Add pickled red onions and a sprinkle of parsley, sumac, and black pepper for
extra flavor.
