LEMON CHICKEN NOODLES

 

Ingredients:

  • 250g low calorie Slendier noodles (Well Rinsed)
  • 150g Boneless Chicken Breast diced
  • 1 teaspoon Minced Garlic
  • 50g Sliced Green Pepper (any bell pepper will work)
  • 100g fresh Spinach (rinsed and drained well)
  • 250ml water
  • ½ a Lemon
  • 1 teaspoon Olive Oil (7g)
  • Salt & Pepper to taste

Method:

  • Place noodles in a bowl and cover with boiling water, set aside.
  • Meanwhile sauté the chicken with Salt & Pepper in olive oil and set aside.
  • Sauté sliced bell pepper and garlic in olive oil until garlic browns then add the chicken. Cook for 7 minutes till the chicken is tender and then set aside.
  • Cook the rinsed and dried spinach down in the same pan and add some lemon into the pan with it. Once cooked down (do not overcook).
  • Add all back into the pan and add the cooked noodles. Stir to heat through.
  • Squeeze more lemon juice to taste.
