KOREAN GROUND BEEF WITH VEGETABLES
Ingredients:
- 250 g mixed Asian vegetables (cauliflower, carrots, cabbage, French beans, and peas.)
- 200 ml water (more if needed)
- 15 ml reduced sodium soy sauce
- 1 tablespoon sugar free syrup
- 1 teaspoon olive oil (7g)
- 1 teaspoon Asian garlic chili paste (like sambal olek or Sriracha)
- 1 garlic clove, minced
- 3 g ginger, minced
- 150g 95% lean ground beef
- 1 Teaspoon roasted sesame seeds
Method:
Step 1
Heat a pan over medium high heat. Add the Asian vegetables and water. Cover and cook 3-4 minutes until tender crisp. Be careful not to overcook the vegetables. If vegetables begin to stick or burn, add a touch more water. Remove and set aside.
Step 2
Add the ground beef to the pan. Cook, breaking it up as you go, until it is cooked through.
Step 3
Meanwhile mix the soy sauce, sugar syrup, olive oil, chili paste, garlic, and ginger. Add to the cooked ground beef and bring to a simmer. Cook for 3-4 minutes.
Step 4
Stir in the vegetables or serve them on the side, scooping some of the extra sauce on top and garnish with the sesame seeds.
