Ingredients:

  • 150g minced chicken
  • 1 teaspoon extra-virgin olive oil (7g)
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon paprika
  • 45g low-fat mozzarella cheese
  • Salt and pepper to taste
  • 1 Hamburger bun or English muffin

Toppings: 

  • 20g lettuce
  • 50g tomato
  • 5g jalapeno 
  • 1 tablespoon tomato ketchup

Instructions:

  1. Heat oven to 400 degrees F (200 degrees C).
  2. Mix the spice into the minced chicken. Divide the chicken  into two sections.
  3. Form each section into two thin patties. Place the cheese on one of the patties, and place the second patty on top. Pinch the edges to seal.
  4. Place the chicken patties into a small, lightly greased baking dish. Place in the oven and bake for 30 minutes.
  5. Remove the pattie from the oven, cover it, and let it rest for five minutes.
  6. Serve the patties on a bun with the toppings.
