Iced-Berries with Warm Lemon Yogurt

 

Ingredients: (Makes 1)

  • Mixed Frozen Berries 250g or 8.8oz
  • Greek Yoghurt 100g or 3.5oz, 0% fat
  • Lemon Juice 3 tbsp
  • Maple Syrup 1 tsp
  • Vanilla Extract 1 tsp
  • Lemon Zest 1 lemon

Instructions:

Arrange the frozen berries in a large bowls. Let them thaw slightly for 5–10 minutes
before serving.


In a small saucepan, gently warm the yogurt with the lemon juice, maple syrup,
vanilla, and a pinch of salt over low heat — do not boil. Stir continuously until just
warmed through (about 3 minutes). You want it pourable, not hot.


Pour the warmed yogurt-limoncello sauce over the slightly softened berries. Top
with lemon zest.
