Hot Honey Beef Crispy Tacos

 

Ingredients: The ingredient amounts are for two.

  • Lean Beef Mince 400g or 14oz
  • Salt 1 pinch
  • Chilli Flakes ¼ tsp
  • Soft Taco 4, small
  • Passata 100g or 3.5oz
  • Mozzarella 80g or 2.8oz, reduced fat
  • Red Onion 1, small
  • Honey 1 tbsp
  • Paprika 1 tbsp
  • Black Pepper ½ tsp

Instructions:

Preheat the oven to 180°C (fan). Line a baking tray with parchment to allow the
tortillas to crisp evenly.


Place a non-stick pan over medium heat and add a light spray of oil. Sauté the red
onion for 4 to 5 minutes until softened but not browned.


Increase heat slightly. Add the mince along with paprika, salt, and black pepper.
Cook for 6 to 8 minutes, breaking up the meat until evenly browned and no
moisture remains in the pan.


Pour in the passata, honey and chilli flakes. Simmer for 2 to 3 minutes until the
mixture thickens slightly. Stir in 1/2 of the mozzarella and mix until melted and
incorporated. Remove from the heat.


Lay the tortillas flat on the trays and give each one a light spray of oil. This helps
them crisp without drying out.


Spoon the beef mixture onto one half of each tortilla. Top with the remaining
mozzarella. Place in the oven open-faced for 3 to 4 minutes, just until the cheese
softens and the tortillas become pliable. Fold each tortilla over the filling. Brush the
tops lightly with any leftover sauce from the pan for colour and flavour. Return to
the oven for 10 to 12 minutes, or until the edges are crisp and the tops are golden.
