GROUND TURKEY PUMPKIN SKILLET

 

Ingredients:

  • 250g chopped pumpkin
  • 50g frozen green peas
  • 1/2 small yellow onion
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon All mix spice
  • 1 teaspoon extra virgin olive oil (7g)
  • 150g minced turkey breast 
  • 200ml chicken Stock
  • Salt and pepper to taste

Method:

  1. In a large skillet, heat oil and add the pumpkin. Cook, stirring occasionally, for about 3 -4 minutes.
  2. Stir in the onion and ground turkey.
  3. Add the cumin, cinnamon, allspice along with the stock and green peas. Stir frequently until the turkey is fully cooked through and pumpkin is soft approximately for 15 minutes.
  4. Season with salt and pepper to taste.
