GROUND TURKEY PUMPKIN SKILLET
Ingredients:
- 250g chopped pumpkin
- 50g frozen green peas
- 1/2 small yellow onion
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/4 teaspoon All mix spice
- 1 teaspoon extra virgin olive oil (7g)
- 150g minced turkey breast
- 200ml chicken Stock
- Salt and pepper to taste
Method:
- In a large skillet, heat oil and add the pumpkin. Cook, stirring occasionally, for about 3 -4 minutes.
- Stir in the onion and ground turkey.
- Add the cumin, cinnamon, allspice along with the stock and green peas. Stir frequently until the turkey is fully cooked through and pumpkin is soft approximately for 15 minutes.
- Season with salt and pepper to taste.
