GROUND RICE SKILLET

Ingredients:

  • 150g Ground Red Meat (Lean Beef, Veal, Lamb Leg, Kangaroo, Goat, Camel)
  • 100g canned whole-kernel corn
  • 50g Bell pepper
  • 65g (raw weight) Basmathi rice 
  • 1 teaspoon extra virgin olive oil (7g)
  • 50g onion, diced
  • 300ml water
  • 1 teaspoon ketchup
  • 1 teaspoon taco seasoning
  • 45g low-fat mozzarella, shredded

Instructions:

  • Heat oil in a large skillet over medium heat;
  • Add the onions to the skillet and heat for 2-3 minutes until just starting to turn translucent;
  • Mix in the ground beef and break it up with a spoon then cook for 8-10 minutes breaking up the beef as it cooks;
  • Mix in the taco seasoning and stir to combine;
  • Pour the uncooked rice, corn, and water into the skillet and stir well then cover and simmer for 15 minutes;
  • Stir the beef and rice mixture 2-3 times while cooking;
  • Mix in the cheese and stir well then Let sit for 5 minutes before serving.
