GRILLED CHICKEN AND MOONG DAL STIR FRY
Ingredients:
- 150g white meat boneless (Chicken breast/ Turkey breast/ Lean Pork)
- 50g moong dal (raw)
- 1 teaspoon extra virgin olive oil (7g)
- 5g green chilli
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1 teaspoon red chilli powder
- ¼ inch ginger
- 150ml water or as required
- ¼ lemon
- 20g coriander leaves
- Salt and black pepper to taste
Instructions:
- Clean the moong dal by washing twice under running water. Take a bowl, add moong dal, and water and soak it for 30 minutes or overnight.
- Season the chicken breast with salt, pepper and ½ teaspoon chilli powder, ½ teaspoon turmeric powder and marinate for 15 minutes.
- Wash and chop the green chilies and ginger. Keep them aside in separate bowls.
- Put the soaked moong dal and 150ml water in a pressure cooker. Add salt, turmeric powder and mix well. Close the cooker and boil the dal till 1 whistle goes off. Turn of the heat and let it cool before opening the pressure cooker lid. Remember the dhal should not be over cooked. Drain the excess water, if required.
- Place a frying pan on medium heat and add oil in it. Once the oil is heated grill the chicken breasts for approximately 10 minutes till cooked through and keep aside. In the same pan add cumin and sauté for 1 minute. Then add coriander powder, red chili powder, chopped chili and ginger to the mixture. Fry this mixture for 1-2 minutes, add salt and mix well.
- Add the boiled dal. Stir fry it for 3-4 minutes. Turn off the gas and garnish with lemon juice and coriander leaves. Serve hot with sliced grilled chicken breast!
