GRILLED BEEF WITH CREAMY PASTA AND BASIL SAUCE

 

Ingredients:

  • 150g Red Meat (Lean beef/ Veal/ Lamb leg/ Kangaroo/ Goat/ Camel)
  • 1 teaspoon extra virgin olive oil
  • 125g low calorie Slendier Pasta (fettuccine), well rinsed
  • 150g okra
  • 100g cottage cheese
  • 30g fresh basil
  • 2 garlic cloves
  • 30g grated parmesan 
  • 100g cherry tomatoes
  • ½ teaspoon dried rosemary
  • Salt and pepper to taste 

Instructions:

  1. Season the meat with salt, pepper and dried rosemary. Set aside for 30 minutes to marinate. Once well marinated grill the beef in a non-stick pan over medium heat till the desired doneness is acquired. 
  2. Cook pasta according to packet instructions.
  3. In the meantime, split the okra in to half and steam for 10 minutes till done. Then season with salt and pepper and then prepare the sauce.
  4. In a food processor, blend together cottage cheese with washed basil leaves and cleaned garlic cloves until smooth. If necessary, you can also add a pinch of salt.
  5. Toss the cooked and drained pasta with prepared sauce to combine.
  6. If desired, serve sprinkled with grated parmesan and cherry tomatoes.
