GREEK-STYLE ROAST FISH

Ingredients:
- 150g Whitefish (Barramundi, Basa, Prawns, Calamari, Dori, Ling, Snapper, Whiting)
- 1 teaspoon extra virgin olive oil (7g)
- 250g Carisma potatoes, scrubbed and cut into wedges
- 50g onion, halved and sliced
- 50g tomatoes, cut into wedges
- 1 garlic clove, roughly chopped
- 1/2 teaspoon dried oregano
- 1/2 lemon, cut into wedges
- 5g parsley, roughly chopped
- 1 tablespoon tomato sauce
- Salt and pepper to taste
Instructions:
- Heat oven to 200C. Tip the potatoes, onion, garlic, oregano, and olive oil into a roasting tin, season, then mix with your hands to coat everything in the oil. Roast for 15 minutes, turn everything over, and bake for 15 minutes more.
- Add the tomatoes and fish and cook for 15 minutes more.
- Serve the fish and potatoes with tomato sauce and lemon.
