GREEK-STYLE ROAST FISH

Ingredients:

  • 150g Whitefish (Barramundi, Basa, Prawns, Calamari, Dori, Ling, Snapper, Whiting)
  • 1 teaspoon extra virgin olive oil (7g)
  • 250g Carisma potatoes, scrubbed and cut into wedges
  • 50g onion, halved and sliced
  • 50g tomatoes, cut into wedges
  • 1 garlic clove, roughly chopped
  • 1/2 teaspoon dried oregano
  • 1/2 lemon, cut into wedges
  • 5g parsley, roughly chopped
  • 1 tablespoon tomato sauce
  • Salt and pepper to taste

Instructions:

  1. Heat oven to 200C. Tip the potatoes, onion, garlic, oregano, and olive oil into a roasting tin, season, then mix with your hands to coat everything in the oil. Roast for 15 minutes, turn everything over, and bake for 15 minutes more.
  2. Add the tomatoes and fish and cook for 15 minutes more.
  3. Serve the fish and potatoes with tomato sauce and lemon.
