GREEK CHICKEN WITH FETA AND DILL
Ingredients:
- 1 teaspoon olive oil
- 150g boneless chicken breast
- 100g tomatoes
- 75g zucchini
- 75g cucumber
- ½ teaspoon salt
- 1 sprig fresh dill
Topping Ingredients:
- 1 teaspoon fresh dill finely chopped
- 20g feta cheese finely chopped
- ½ teaspoon lemon juice
Method:
- Preheat oven to 400c for 10 minutes.
- Drizzle the oil on a large sheet pan. Put the chicken, tomatoes, dill, and zucchini on the tray. Sprinkle with salt. Bake for 30 minutes.
- Meanwhile, stir together the topping ingredients.
- After 30 minutes the chicken should be cooked through. Remove the chicken to a serving tray. Turn the broiler on. Put the tray of veggies on the top oven rack. Broil for 3-5 minutes or until they are beginning to brown and look roasted. Discard the cooked dill sprigs.
- Put the veggies on top of the chicken on the serving tray. Sprinkle the feta mixture on top.
