FISH SALAD WITH SPINACH
Ingredients:
- 150g White fish fillets
- 250g baby spinach
- 1 teaspoon olive oil
- 30g spring onions
- 1/2 tablespoon parsley
- 1/4 teaspoon dried oregano
- 1 tablespoon apple cider
- 1/2 tablespoon sugar
- 20g walnuts crushed
- Salt and pepper to taste
Method:
- Wash and clean the parsley, using a chopping board chop it into fine pieces. Take baby spinach and wash them under running water, keep them aside.
- Take a non-stick pan, put it on medium flame and heat olive oil in it. Once done add in the fish fillets in the pan and cook it for a minute or until thoroughly cooked. Turn the gas off and keep it aside.
- Take a huge mixing bowl and add the baby spinach followed by green onions in it. Then in another small bowl add oregano (dried), apple cider vinegar, olive oil, chopped parsley, pepper and salt. Mix all the ingredients well.
- Transfer the mixture on the baby spinach bowl and add in the pan-fried fish in it. Mix thoroughly
