FISH IN A VEGETABLE PATCH
Ingredients:
- 50g tomato sauce
- 20g diced celery
- 50g bell pepper
- 30g diced onion
- 100g diced carrots
- 1 teaspoon lemon juice
- ½ teaspoon Worcestershire sauce
- 150g whitefish fillet
- Salt and pepper to taste
Instructions:
Step 1
In a small saucepan, combine the tomato sauce, celery, green pepper, onion, carrots, lemon juice, Worcestershire sauce and salt. Bring to a boil. Reduce heat and simmer, covered, for 5 minutes.
Step 2
Spoon vegetable mixture into a baking dish. Place fish filets over vegetables and spoon some of the sauce over the fish.
Step 3
Bake, uncovered, at (200 degrees C) for about 15 minutes or until fish flakes with a fork. Garnish with lemon twists and chopped celery.
