EGG WHITE BITES
Ingredients:
- 1 teaspoon extra virgin olive oil (7g)
- 250g egg white
- 50g Non-Fat Plain Greek yoghurt
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried oregano
- 100g bell pepper, chopped
- 45g part skim mozzarella
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180 C. Generously grease a muffin tray with cooking spray.
- Combine egg white, Greek yoghurt, salt, black pepper, garlic powder, onion powder, oregano in a bowl. Whisk until smooth and no lumps remain. Mix in bell pepper and cheese.
- Divide egg mixture between the muffin cups, filling until almost full.
- Bake in the preheated oven until egg bites puff up substantially and begin to brown, 20-25 minutes. Allow to cool for 5 minutes, while the bites will deflate automatically.
- Run a knife around the edges and bottoms to loosed and remove from the cups. Serve and enjoy.
