EGG WHITE BITES

 

Ingredients:

  • 1 teaspoon extra virgin olive oil (7g)
  • 250g egg white
  • 50g Non-Fat Plain Greek yoghurt
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 100g bell pepper, chopped
  • 45g part skim mozzarella
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180 C. Generously grease a muffin tray with cooking spray.
  2. Combine egg white, Greek yoghurt, salt, black pepper, garlic powder, onion powder, oregano in a bowl. Whisk until smooth and no lumps remain. Mix in bell pepper and cheese.
  3. Divide egg mixture between the muffin cups, filling until almost full.
  4. Bake in the preheated oven until egg bites puff up substantially and begin to brown, 20-25 minutes. Allow to cool for 5 minutes, while the bites will deflate automatically.
  5. Run a knife around the edges and bottoms to loosed and remove from the cups. Serve and enjoy.
