CUCUMBER DIP

Ingredients:
- 1 teaspoon extra virgin olive oil (7g)
- 100g cucumber
- 150g carrot
- 100g bell pepper
- 10g mint, chopped
- 50g Greek yogurt
- 10g walnuts, chopped
- Salt and pepper to taste
Instructions:
- Grate the cucumber. Then squeeze the grated cucumber to get rid of the excess liquid. You can do it with a towel or just with your hands.
- Now mix all the chopped ingredients except carrots and bell pepper and season with salt and pepper.
- Serve the dip with carrots and bell pepper.
