CRISPY SHRIMP BURGERS
Ingredients:
- 1 whole-wheat hamburger bun or English muffin
- 150g raw shrimp frozen, peeled, and deveined
- 50g tomato, sliced
- 10g salad leaves
- 50g cucumber, sliced
- 1 teaspoon extra virgin olive oil (7g)
- 1 garlic clove
- 10g cilantro
- 1/4 teaspoon salt
- 1 teaspoon tomato sauce
- 40g low-fat mozzarella cheese
- 1/4 teaspoon paprika
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1 tablespoon Panko breadcrumbs
- 30g egg white, lightly beaten
Instructions:
- Take half the shrimp and coarsely chop it. Add it to a bowl. Take the other half and add it to a food processor with garlic and cilantro. Pulse to create a chunky paste. Mix in with the chopped shrimp.
- Add the salt, paprika, onion powder, cayenne pepper, Panko breadcrumbs, and egg white. Mix until just combine.
- Make it into a Pattie.
- Heat a skillet over medium-high heat with a teaspoon of oil. Add the Pattie and cook for 3-4 minutes on each side. When one side is cooked add the mozzarella cheese on top of the cooked side of the Pattie, let the cheese melt.
- Meanwhile, toast the bun.
- Apply tomato sauce to the bun fill the burger with salad leaves, tomato, cumber slices, and the Pattie.
- Serve warm.
