CREAMY SPINACH CHICKEN PASTA

 

Ingredients:

  • 125g low calorie Slendier Spaghetti 
  • 1 teaspoon extra virgin olive oil (7g)
  • 150g boneless chicken breast 
  • 10g fresh Basil, chopped 
  • 3 cloves garlic, chopped
  • 150g crushed tomato
  • ½ teaspoon red chili flakes
  • 2 tablespoon non-fat plain Greek yoghurt
  • 150g spinach
  • 1 tablespoon parmesan cheese
  • Salt and Pepper to taste

Instructions:

  1. Cook the Pasta according to package instructions.
  2. Heat oil in a large pot on medium heat. Add the sliced chicken, salt, and pepper. 
  3. Brown the chicken, making sure to cook through. Set chicken aside.
  4. In the same pan sauté garlic, and red chili flakes into the pot and stir.
  5. Add crushed tomatoes, stirring for a few minutes.
  6. Add the yoghurt, stirring until incorporated.
  7. Add spinach and stir until the spinach cooks down and incorporates.
  8. Add chicken, pasta, and parmesan, stirring until pasta is evenly coated.
  9. Garnish with more parmesan cheese and serve!
