CREAMY SPINACH CHICKEN PASTA
Ingredients:
- 125g low calorie Slendier Spaghetti
- 1 teaspoon extra virgin olive oil (7g)
- 150g boneless chicken breast
- 10g fresh Basil, chopped
- 3 cloves garlic, chopped
- 150g crushed tomato
- ½ teaspoon red chili flakes
- 2 tablespoon non-fat plain Greek yoghurt
- 150g spinach
- 1 tablespoon parmesan cheese
- Salt and Pepper to taste
Instructions:
- Cook the Pasta according to package instructions.
- Heat oil in a large pot on medium heat. Add the sliced chicken, salt, and pepper.
- Brown the chicken, making sure to cook through. Set chicken aside.
- In the same pan sauté garlic, and red chili flakes into the pot and stir.
- Add crushed tomatoes, stirring for a few minutes.
- Add the yoghurt, stirring until incorporated.
- Add spinach and stir until the spinach cooks down and incorporates.
- Add chicken, pasta, and parmesan, stirring until pasta is evenly coated.
- Garnish with more parmesan cheese and serve!
