Creamy Egg Mayo Avocado Toast

Ingredients: The ingredient amounts are for one.

  • Egg 2
  • Avocado 1, small
  • Sourdough Bread 2 slices
  • Greek Yoghurt 20g or 0.7oz
  • Black Pepper 1 twist
  • Chilli Flakes pinch
  • Salt pinch

Instructions:

Bring a small pot of water to a boil. Carefully lower the eggs into the water and
simmer for exactly 6 minutes for a perfect jammy yolk. Immediately transfer the
eggs to a bowl of ice water to stop the cooking process. Once cool, peel the shells.


In a small bowl, roughly mash the soft-boiled eggs with a fork. Stir in the Greek
yoghurt until creamy but still slightly chunky. Season generously with salt and
pepper to taste.


Toast your bread slices until golden and crisp. Halve and pit the avocado, then
scoop the flesh onto the toast Use a fork to smash the avocado evenly across the
bread, adding a tiny pinch of salt if desired.


Spoon the creamy egg mayo mixture over the top of the avocado toast. Finish with
a sprinkle of red pepper flakes for a little heat. Serve immediately while the toast is
still warm.
