Creamy Avocado & Egg

 

Ingredients: (Makes 1)

  • Eggs 2
  • Avocado 1/2
  • Light Soft Cheese 20g or 0.7oz
  • Rocket 1 handful
  • Black Pepper 1 twist
  • Salt pinch

Instructions:

Place the eggs in a saucepan and cover with cold water. Bring to a boil, then
reduce heat and let simmer for 7-9 minutes for a firm yolk. Once done, drain and
transfer the eggs to an ice bath for a few minutes before peeling.


In a small bowl, mash the avocado with the cream cheese until smooth. Season
with a pinch of salt & pepper to taste.


Spread the avocado cream cheese mixture evenly on a plate. Slice the boiled
eggs and place them on top. Sprinkle with another pinch of salt & pepper. Top with
a handful of fresh rocket leaves for extra flavor and crunch. Enjoy immediately!
