CLASSIC PUMPKIN SOUP
Ingredients:
(makes 01 serving)
- 150g Pumpkin
- 25g Onion
- 1 clove Garlic
- 150ml Vegetable Stock/ Water
- 1tbs Low fat Yogurt
Method:
- Sauté the onion and garlic till golden brown.
- Add the diced pumpkin and roast for approximately 10 min and then add the stock.
- Boil till the pumpkin is soft and allow it to cool and then blend till it’s smooth.
- Add the yogurt and season with salt and pepper.
- Best served with toasted croutons
Tips:
- Add more vegetables
- Swap water for stock
- Use roasted pumpkin
- Add spices
