CLASSIC PUMPKIN SOUP

 

Ingredients:

(makes 01 serving)

  • 150g Pumpkin 
  • 25g Onion
  • 1 clove Garlic
  • 150ml Vegetable Stock/ Water
  • 1tbs Low fat Yogurt


Method:

  • Sauté the onion and garlic till golden brown.
  • Add the diced pumpkin and roast for approximately 10 min and then add the stock.
  • Boil till the pumpkin is soft and allow it to cool and then blend till it’s smooth.
  • Add the yogurt and season with salt and pepper.
  • Best served with toasted croutons

Tips:

  • Add more vegetables
  • Swap water for stock
  • Use roasted pumpkin
  • Add spices
