CHOPPED CHICKEN & SWEET POTATO SALAD

 

Ingredients:

  • 100g lettuce
  • 1 teaspoon extra virgin olive oil (7g)
  • 250g sweet potato (raw weight), cooked diced
  • 150g chicken breast skinless boneless 
  • 50g deseeded cucumber
  • 1 tablespoon apple-cider vinaigrette 
  • 1 teaspoon sugar free syrup
  • Salt and pepper to taste

Method:

  1. Boil and shred the chicken
  2. Toss all sweet potato, boiled chicken, and cucumber with vinaigrette and sugar free syrup.
  3. Season with salt and pepper and serve.
