CHICKEN SHAWARMA

Ingredients:
- 150g Boneless Chicken Breast
- 1 teaspoon extra virgin olive oil (7g)
- 10g Romaine lettuce, washed and dried
- 30g cherry tomatoes, quartered
- 50g cucumbers, chopped (deseeded)
- 1 pita bread
- 20g onions, sliced
- 1/2 teaspoon cumin
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 1/8 teaspoon cayenne powder
- 1/2 teaspoon table salt
- 1 teaspoon ground coriander seeds
- 1 tablespoon lemon juice
- 1 clove garlic minced
- 1 tablespoon low-fat Greek yogurt
- 1/4 teaspoon red pepper flakes
Instructions:
- Preheat the oven to 400°F.
- Marinate the chicken with garlic, olive oil, lemon juice, and the rest of the spices for 30 minutes.
- Make the sauce by mixing Greek yogurt, and crushed red pepper flakes. Refrigerate until needed.
- In a preheated cast-iron skillet, sear the marinated chicken over medium heat, for 5 minutes on each side. Mix onions in with the rest of the marinade.
- Turn off the stove, take the chicken out and cook the onions with the marinade using only the residual heat in the pan, for about 1 minute.
- Place the chicken back on top of the onions and bake in the oven for 10 minutes.
- When it’s done, cut the chicken and assemble it on pita bread with the vegetabls and serve.
