CHICKEN SHAWARMA

Ingredients:

  • 150g Boneless Chicken Breast
  • 1 teaspoon extra virgin olive oil (7g)
  • 10g Romaine lettuce, washed and dried
  • 30g cherry tomatoes, quartered
  • 50g cucumbers, chopped (deseeded)
  • 1 pita bread
  • 20g onions, sliced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cayenne powder
  • 1/2 teaspoon table salt
  • 1 teaspoon ground coriander seeds
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1 tablespoon low-fat Greek yogurt
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Preheat the oven to 400°F.
  2. Marinate the chicken with garlic, olive oil, lemon juice, and the rest of the spices for 30 minutes.
  3. Make the sauce by mixing Greek yogurt, and crushed red pepper flakes. Refrigerate until needed.
  4. In a preheated cast-iron skillet, sear the marinated chicken over medium heat, for 5 minutes on each side. Mix onions in with the rest of the marinade.
  5. Turn off the stove, take the chicken out and cook the onions with the marinade using only the residual heat in the pan, for about 1 minute.
  6. Place the chicken back on top of the onions and bake in the oven for 10 minutes.
  7. When it’s done, cut the chicken and assemble it on pita bread with the vegetabls and serve.
