CHICKEN PHO

Ingredients:
- 125g Low-Calorie Slendier Noodles
- 400ml chicken stock
- 3g of ginger, peeled and sliced into matchsticks
- 50g onion, thinly sliced
- 1 clove garlic, crushed
- 2-star anise
- 3g cinnamon stick
- 150g (Raw weight) boneless chicken breast
- 1 teaspoon fish sauce
- 2 teaspoon light soy sauce
- 1 teaspoon lime juice
- 50g bean sprouts
- 10g Thai basil leaves, finely shredded
- 50g mushrooms shredded
- 30g Carrot shredded
- 30g spring onions. sliced
- 20g Tomato, sliced
- 10g red chili, seeds removed and thinly sliced
- Salt and pepper to taste
- lime wedges, to serve
Instructions:
- Prepare the Slendier Noodle according to the directions on the packet and keep aside.
- Place the stock, ginger, onion, garlic, star anise, cinnamon, and chicken breast into a large saucepan and bring to a boil. Reduce heat and simmer until the chicken is cooked for about 15 minutes.
- Strain the stock, reserve the chicken breast and discard the rest of the solids. Return the broth to the saucepan add the shredded mushrooms and cook for 5 more minutes.
- Tear the chicken breast into rough strips and set aside until needed.
- Add the sauces and lime juice to the broth and adjust the seasoning to taste with salt and white pepper.
- Drain the noodles and serve in a bowl. Top with shredded chicken, and cover with hot mushrooms and broth. Top the bowl with shredded carrot, shredded herbs, spring onions, chili, and Serve with a lime wedge.
