CHICKEN CUCUMBER BITES

Ingredients:

  • 150g White Meat ( Turkey Breast, Chicken Breast, Lean Pork) 
  • 1 teaspoon extra virgin olive oil (7g)
  • 100g English cucumbers, cut into thick slices
  • 20g green onions, sliced
  • 10g diced celery
  • 2 tablespoon low-fat cream cheese, softened
  • 1 tablespoon sour cream
  • 1 teaspoon hot siracha sauce
  • Salt and pepper to taste

Instructions:

  1. Season the meat with oil, salt, and pepper.
  2. Grill the chicken for approximately 7- 12 minutes.
  3. Slice the cucumber and set it aside.
  4. Meanwhile in a bowl place the cream cheese, sour cream, and hot sauce and stir to combine. Chop the grilled chicken breast. Now add the chicken, celery, green onions, salt, and black pepper and toss to combine.
  5. Place one tablespoon of chicken salad on each of the cucumber slices.
  6. Serve chilled or warm.
